Kourbani

An old religious and social tradition mainly found in Macedonia, Thrace, and other Balkan regions awaits to be discovered. Associated with the ritual of animal slaughter offering in honor of a saint, Kourbani takes place during major feast days such as those of Prophet Elijah, Saint George, Saint Demetrios, Saint Athanasios, and Saint Paraskevi. The meat —beef, lamb, or goat— is blessed by the priest, cooked in large cauldrons, and distributed to those present, while musical instruments set the tone for the celebration. Kourbani, which involves contributions or offerings from members of the community, symbolizes gratitude and social solidarity.

Where to experience it: The custom is revived in Trigoniko and Platanorrema.
