Gourounochara
One of the most distinctive Christmas customs in Grevena is “Gourounochara” or “Gournochara”. It refers to the traditional slaughtering of pigs, usually on the second day of Christmas, and the preparation of local products such as sausages and the well-known “tsigarides”, pork pieces fried in their own fat until they turn crispy. In the past, the process was a family affair carried out with the help of relatives and neighbors, forming an important part of the local household tradition, and social life. Today, the custom is revived in the central squares of several villages of Grevena in an open communal celebration. There, you will witness the cooking of tsigarides, taste them, drink hot wine and, if you wish, dance at the large feast that brings the entire community together.
